Thịt ức gà tẩm bột chiên giòn với những dải thịt được thái nhỏ dài, được tẩm ướp chút gia vị cho ngấm. Sau đó nhúng vào trứng, áo 1 lớp bột rồi chiên ngập dầu cho chín vàng giòn béo.
Ức gà rửa sạch, thấm khô nước rồi thái thành những miếng nhỏ và dài. Ướp thịt ức gà với đầu hành lá, gừng thái nhỏ, 1g muối, 1/4 muỗng cà phê tiêu, 1 muỗng canh nước tương, 1 muỗng canh rượu vang, trong khoảng 10-15 phút.
Cho trưng ra chén, đánh tan đều. Đun nóng nhiều dầu ăn, nhúng thịt vừa ướp vào tô trứng, áo qua 1 lớp bột chiên giòn rồi thả vảo chảo, chiên ngập dầu. Chiên đến khi gà chín vàng cam và giòn thì vớt ra để ráo dầu.
